Valentine Menu for a Luncheon
A Luncheon for St. Valentine’s Day
Everyone ought to celebrate St. Valentine’s Day, for after all it is one of the loveliest days in all of the year. Even if there is only a guest or two extra for luncheon, try to bring the Valentine’s atmosphere into it. Some little valentines for place cards and a big heart-shaped valentine cake for dessert will do wonders for the party spirit.
This seems to be the day of all others for a ladies’ luncheon. The valentine idea should be emphasized in the table decorations; a pretty idea is to make doilies of flowered wall papper, edging them with lace paper. The central decoration may be a Jack Horner pie of pink crepe paper, with a heart-shaped handle, wound with pink paper and containing among the pink roses little joke favors for each guest.
The favors at each place may bear the name cards and consist of little pink baskets filled with pink and white candies, and cunning little nosegays tied with pink ribbon. Or, in the case the luncheon is turned into an evening supper for a few ladies and men, the little nosegays may be made into boutonnieres for the men.
A menu could be:
*Ham and Egg Club Sandwiches
*Fruit Salad
*Raspberry Bavarian Cream
*Little Heart-Shaped Sponge Cakes
*Pink and White Candies
*Coffee
Recipes
Ham and Egg Club Sandwiches
6 slices buttered toast
Crisp lettuce
2 hard-cooked eggs
6 slices fully-cooked ham, broiled
2/3 cup mayonnaise
1/2 teaspoon mustard
Chop the eggs coarsely and add them to the mayonnaise. Lay two crisp leaves of lettuce on two slices of toast, and over this place a generous spoonful of the mayonnaise and egg mixture. Next, put a slice of ham seasoned with mustard, a further leaf of lettuce, more dressing, and last of all the remaining slice of toast. Cut across cornerwise and serve at once while the ham is still thoroughly hot.
Fruit Salad
2 bananas
2 oranges
Juice of 1/2 lemon
Lettuce
Slice the bananas and oranges. Pour the lemon juice over all. Serve on lettuce leaves with French dressing if desired.
Raspberry Bavarian Cream
1 1/2 tablespoons gelatin
1/2 cup cold milk
3 egg yolks
1/2 cup sugar
1/8 teaspoon salt
1 1/2 cups scalded milk
1 teaspoon vanilla
1/2 pint cream, whipped
Soak gelatin in cold milk for 5 minutes. Beat yolks, sugar, and salt together until light. Add scalded milk and mix thoroughly. Cook in double boiler or over hot water, stirring constantly, until mixture coats a metal spoon. Add gelatin. Stir until dissolved. Set in pan of cold water and stir until it begins to thicken. Add vanilla and fold in whipped cream. Stir in 1/2 cup mashed raspberries. Turn into a heart-shaped mold which has been dipped in cold water. Chill until firm. Serves 6.
